I would like to wire relays with positive output until it hits limit switch then when the power is disconnected it switches polarity

More info please. How are you controlling the relay?

1) with 1 or 2 push switches

2) toggle switch

3) momentary pulse

4) constantn voltage

Could you please explain to us exactly what you're trying to achieve?
What you've posted so far is extremely vague.
There are plenty of ready made timers on the market or depending on your abilities you could try the above. I don't understand "switching polarity" what's the context?
Any 5 pole c/over relay can be made to switch polarity, either on supplying or not supplying current to its coil.
Many timers include a power switching relay.

I basically want a motor to open and close a chicken door on a timer with a 12 volt setup

Use the above circuit or use 2 ready made timers from DEI, 528t:-

The switch is an SPCO, or momentary centre off, this will give you one touch open and close.

You could also do a light senitive one that would open the door in the morning and close it at night.
