i'm wondering if a relay is required for a rear defroster output (-)?  my car's rear defroster button doesn't stay on, so when i remote start in the winter, the snow on my back window won't melt away.  or can i just tap straight into the rear window defroster turn-on wire?

If the defroster switch doesn't stay on then it's powering a relay which holds it on. If you have an extra channel on the remote, you can use that to send a signal to the switch which in turn will trip the relay. Check the polarity before you wire it up!
