If I bridge an amp that has two 4 ohm channels it will see 2 ohms, right and if I wire two 8 ohm subs in parallel that would make 4 ohms, right. The subs are 150 rms, each, rated and the amp runs at  125 rms at 4 ohm and I'll bridge that to get a 2 ohm load at 250 rms right. The amp is only 2 ohm stable so I wouldn't bridge it at 2 ohm to get an 1 ohm load at 300 rms.

yes, IF the load you connect is "4 ohms" (like 1 4--ohm driver) the amp will "see" 2 ohms, which is min. impedence for a "2-ohm stable" amp.

correct. This is fine on a bridged stereo amplifier.

so with two parallel-wired 8-ohm subs, and the amp bridged mono, the subs will get 500WRMS total between them. This power rating is slightly higher than their combined 300WRMS power handling rating but depending on the amp this may not be a big deal. I just recommend you keep the gains turned down at first, and find a point where the subs sound the best without over-powering them.
You should be fine.

each sub is rated to handle 150WRMS. combined on a single channel the total combined power handling is then 300WRMS between them.
The amp's output bridged mono with a 4-ohm load will be the same as a stereo two-ohm load.
125WRMS x 2 @ 4 ohms (250W)
250WRMS x 2 @ 2 ohms (500W)
500WRMS x 1 @ 4 ohms (500W)
