i know i was reading about surface area making a difference because the sub pushes more air.  So if i were to take a 12 inch speaker not that im going to and take semi spheres and epoxy the flat end to the cone there would be more surface area correct.  Would it make it louder or deeper if i did this on either side of the cone?

Yes it will effect the sound, but not how you describe.  What will happen is that the added mass will lower Fs and efficiency.

But it wouldn't work.  Have you ever had a subwoofer out of an enclosure playing music?  It doesn't play loud at all.  It plays much louder with the enclosure because the front wave is seperated fromt he back wave.
