I've never used it before, but I wanted to do my system right this time.  Whats the best thing to use to cut the stuff?

if your going to lay out dynomat or silencer i just lay out my sheet where i want to put them press them into place and then use a razor knife and trim the accordingly. I do all of this befor i remove the backing of course. Then i remove the backing lay it out smooth and then use a heat gun and roller to smooth it out the rest of the way to get a good then fit. Forms better also when you heat it up.

I  agree a sharp razor or utlity knife works quite well you also get the ability to work with the material better around difficult shaped areas.....
