I have a Alpine CDM-7874 head unit. In my owners manual it says that the maximum pre-output voltage is 2V/10 k ohms. I was told that this means that my deck puts out 2 volts againts 10 thousand ohms of resistance. I'm not sure if that is what it really means. I really just wanna know if my deck only puts out 2 volts. Because if what I was told is true, there would be no resistance in my RCA cables and I'm thinkin it would put out more volts. Someone help me out.

2 volts would be the maximum voltage out of the preouts.  The RCA cables aren't what provide the preouts the major resistance, your amp's input stage is.  Don't get caught up in how much resistance your RCA's have.  10K means 10 thousand, not 10 million- and I think that figure is resistance to ground, but I'm not 100% on this.  Maybe someone else here knows.

My ex once told me I have a perfect face for radio.

geep is right.  Just look at the voltage output, not at the test criteria used to come up with the number.  The deck outputs 2 volts.  You would set the gain on the amp to match the 2 volt output.  But turn it down (toward a higher voltage number) if clipping is indicated.  The published data of 2 volts out seems to be an honest rating and is not uncommon.
