what is the voltage going through the amp turn on wire coming out of the headunit to the amp?

~12 volts from aftermarket head units.  Some factory decks provide a 5 volt signal to the proprietary amp.  Amperage?  Less than 1/2 amp.
Build the box so that it performs well in the worst case scenario and, in return, it will reward you at all times.

on a stock head unit running to an amp to power a sub, would i be able to run the remote wire off of the ign 12V wire? would i need an inline fuse or anything like that? thanks

i have ran from the ign. wire before with no in line fuse and it was fine for me.

run it from the ignition,s accesory wire not 12v wire or else it will drain your battery

Yes, fuse the remote wire.  Just for the sake of safety when connecting to any power source.  You can get a 49 cent fuse holder and a 5-pack of 500 mA (1/2 amp) fuses locally or through PartsExpress...fuse location is near the source, as usual.  I have a 500 mA fuse in the remote lead from a switched 12 volt wire, splits to two amps, and have not blown a fuse since the install a year and a half ago.

until the wire shorts somewhere in the car and starts a fire or burns up a bunch of wiring..... fuse it !!!
