What types of insurance do you guys out there have who are doing this by yourself?   Or even if you have just a small shop?

None, the shop pays for any damages done to vehicles by the employees. This is a tax right off for the company and also if it happens too many times, the person will look for a new job

Thats what I mean, if you dont work for anyone, but do this fulltime on your own, what type of protection do people have in case a guys car catches on fire two weeks or a year after you installed something in his car?  I heard a horror story about this and I am not sure the insurance I have covers something that far down the road.

Usually if something happens after the car leaves our shop ( like a year or so down the road ) it's not our fault. That's what the customer's insurance is for. If YOU damage something on the car while installing the unit, then you are liable but after the car leaves the shop ( even if it's the next week ) and it burns down, the vehicle insurance will cover this, not the shop.

Even if they can prove that that the installation job was the cause? If so, then I am fine, because I have coverage for vehicles that are in my control, but not once they leave.

It's not different than if someone gets behind the wheel of a car, absolutely smashed and totals off  his car. Insurance will cover for this, but not much use if the guys dead or in jail. That's what insurance is for, accidents. Not that you were trying to burn down anyones's vehicle... it just happened and insurance here would cover for this type of situation.
