i got two subs and they are dual 4 ohm. also a a two channel amp. my question should i hook them up in (parallel/series) and get a 4 ohm load and run the amp bridged. or should i hook the subs to get two 2 ohm subs and run the amp in 2ohm sterio?? what are the pros and cons of each set up???

The loading on the amplifier will be the same in both cases.  The only pro or con is running the amplifier bridged will ensure a mono signal so both subs receive the same input.  Running in stereo leaves the possibility that one will get a hotter input or an out-of-phase signal from the other.  You want both speakers in a multiple-sub setup to play the same thing.
