Ok I have a VW Jetta and I had a friend install a 1600watt Power Aqustics amp with a 12" 300watt woofer. What can I do to stop my headlights from dimming, and if I do nothing will my car eventually die ?

Reground your battery and alternator, A capacitor will do no justice in stop the lights from dimming.
No security system can beat the tow truck :(

Do the big 3 (search button top right of this page) as recommended above, and search for a high output alternator.  Yes, you can easily kill the alternator with that kind of draw.  Be judicious with the volume control until you can make the above happen.
