I have (2) 8" 300rms 600max 4ohm speakers wired to a 2/1 channel amp, 165w x 2(4Ohms) 500w x 2(2Ohms). Whats the best way to connect them (in detail)? Or do i need a different amp?

How do you have them connected right now? Is it working? Why do you feel it is incorrectly connected?
With your present gear, one woofer to each channel of the amp (leave the amp in stereo mode), presenting a 4 ohm load. Your woofers will receive 165 watts each. This is your only SAFE option. (and I'm gonna get called on that statement...)
It all reminds me of something that Molière once said to Guy de Maupassant at a café in Vienna: "That's nice. You should write it down."

If you are using these to provide some of the midbass as well as sub bass, then the way described above is the best.  You will have stereo.  If you are crossing these over at 100 Hz or below, though, my preference would be to wire the subs in series to 8 ohms and bridge the load across the channels.  The output is still 165 watts per sub.  You have seen the woofer wiring wizard located in the help section along the left column?

By the way, there is a misprint in the power data you provided for that amp.  500 watts X 2 at 2 ohms??

Build the box so that it performs well in the worst case scenario and, in return, it will reward you at all times.

Depending on it he has a DVC or SVC he can wire it up in either 2 ohm ( SVC ) or 4 ohm ( DVC ). IMO, either of these are safe.
