Well i have a Phoenix Gold OCTANE-R 8.0:4 amp. Its supposedly 125w x4. My problem is that the speakers i have are 2 ohm, they are KAPPA 60.7CS's. How can i wire these up so they will work correctly?

That amp is only 4 ohm stable in stereo and 4 ohm stable mono.
your only way to go would be to lose adjustment somewhere and wire the speakers at 4 ohm per pair of speakers and wire them to either 2 channels bridged, which would be quite over powered, or 4 ohm stereo and have 2 channels empty

That amp is stable at 2 ohms per channel...so why not just hook em up a speaker to a channel???

Phoenix Gold is LAME!!! I would contact tech suport, or your manual, and find out for sure WHAT the amp is really capable of.
I say PG is lame, because the web page says the Octane-R amps aer 2 ohm stable in stereo, AND 4 ohms stable in stereo... Both stable specs posted on the same page... Someone needs to make up my mind.
Contact Tech support, but a bridged 4 ohm load is the same electrically as is a 2 ohm stereo load, so I would think it would be perfectly safe to run those speakers off that amp.
It all reminds me of something that Molière once said to Guy de Maupassant at a café in Vienna: "That's nice. You should write it down."

While I have no doubt that the amp is indeed 2 ohm stable in 4 channel mode, the power on tap at 2 ohms per channel is probably going to give the speakers a heart attack. End result is sss (smelly speaker syndrome), so if you do this, keep those gains darn near off and watch the volume control.
Top Secret, I can tell you but then my wife will kill me.
