I did a search w/o finding anything... My gf has a (99?) Sunfire. I have a sublaying around and I was going to throw it in there for her but she has the stock cd player.  I havent bothered to look behind there yet or anything, but I was woundering if it is possible to set up a system with out an aftermarket headunit.  Thanks for any input guys.

absolutlely. Its not gonna have any pre-outs or anything, so what u do is go to the store and pick up an LOC (line out converter). its just a part that you splice into a speakers wire, to get a signal to the amp. then u run that to the amp, as if it were the rca running from the head unit, tune it a little, and vioala!~

Yes it is very much possible, you will need what is called a Line Output Convertor. With this device you use the signal to the factory speaker and convert it to a low level input for your amp (RCAs)

As for the rest of your wiring, not too much different from an install with an aftermarket HU. The only other confusion you may have is getting your remote power, which in most cases, there is a switched +12V behind the factory HU that should be sufficient, just remember to fuse the line.

This should give you a good start in achieving your quest, good luck.
