The dimmer wire is basically a feature that complies with only a certain amount of vehicles.  If you have your product manual for your HU, look for your display button.  That should atomatically change your HU from day to night mode.  The dimmer wire will only control the dimming of your lights in your HU from the dimmer control of your vehicle.  if you don't have a dimmer wire in the vehicles factory harness, don't worry about the dimmer (or ORANGE / white) wire from your HU harness.

If the aftermarket radio's illumination wire is not connected to anything, the radio should stay in "day mode." Try going through the radio's programming menus as sonicsound suggests.
