I would like to incorporate a laptop as a sort of MP3 server in my car, anyone done this? What HU's have a provision for an AUX input? I wonder if there exists a an IP-BUS (pioneer) to USB or serial adaptor so I could convince the pioneer HU that the PC is just a BIG cd cd changer...

But yes you can use the laptop as an mp3 player. What you will need to do is find a head unit with an aux input. Most of the major brands mid to high level models have the option of aux input Most of them sell a separate adapter that lets you tap into the aux from an rca connection. But as far as I know there is not head unit that allows you to connect to a USB or serial connection. I listen to mine all the time with a simliar connector to the one shown above and love it. I have an MP3player (CDXMP70 w/Aux input) in my  vehicle, but prefer to listen to my MP3's using my laptop. I use Winamp 3 with crossfade, custom play lists, etc. If your head unit has an Auxilary input, you're set to get, but worse case scenario, you can always use an FM modulator. When you hook it up, let us know how you like it.

BTW, Pioneer should offer a unit that will allow you to use an auxilary input. You can check Pioneer's site here.
