I have a 2000 dodge ram and a Viper 791. My question is if it is possible to use the onboard relays of the 791 to power my door locks, and if so should I use diodes? Or is it better to use a couple of  SPDT  relays wired in the 5-wire configuration?

Yea those doors are five wire. Just use two relays and you'll be fine.
