I have both a 12V deep cycle battery, car/boat size, and also a computer
power supply, aprox 450Watts.
I'd like to be able to take both of the 12 volt DC power sources and put
a rheostat on them to be able to dial the power down to betweeen 2 volts
and 12 volts.
I need to run small motors from the power and need those motors to have
variable RPM's.
FWIW, I know the computer power supply is switched and needs a load on
the 5volt source to make the 12V side work.
How do I determine which rheostat to purchase?
anyone have a specific one I should get?

Any type will work. Just look for one that can handle your amp load.
