Alright, I want to do a lot to the interior of my car including painting a lot of parts. I just started looking at carbon sheets though and I want to know if it would be easier to just remove the peices i want to paint & just slap on carbon sheets? Would I have to prep & prime the peices before laying down carbon fiber like I would be painting them?

I've never worked on painting before so I would like to stay away from it as much as possible.  Also, if you lay carbonfiber sheets on textured surfaces, will the texture still show? bubbles? flat & smooth surface?

Lastly, it seems like the only kind of sheets I can find online (using google) are carbon fiber sheets. Do you guys know if there are any sheets of just specific colors thats not carbon textured? I want to incorporate both black and red into my car & have that shiney glossy look.

(Best price i found so far- 1800"sq. black carbon sheet: $100)

You can lay vinyl on any surface with the application of some spray adhesive.
Now getting it to lay smooth shouldn't be that big of a problem since most interior's of a car are already smooth, but if you aren't sure and want to make sure that texture won't show through, then get a test piece and practice on it.
Or you can apply bondo to the piece and sand it down to fill all the little textured gaps, then lay the vinyl over it.
