I am using Evercoat Z-Grip lightweight filler and after spreading the first layer on 15 minutes later i noticed that it had heated up just as fiberglass does. Although it seems dry to the touch, do I have to wait for the heat to subside before sanding?

sanding it while it's "hot" might or might not be easier depending on what you want to do.
I noticed that when bondo isn't hard or is curing (hot) it's easier to remove larger amounts of material, but if you try to do some fine sanding, the sand paper gets gummed up real fast.
I usually wait until it's cured before I do finishing sanding and if I want to remove lots of material I'll sand with some 80 grit while it's soft.
