I have a 2-channel pioneer amp that  produces 125watts x 2 channels at 4 ohms, my question is if I wire one 4 ohm woofer to each channel then would I end up putting an 8 ohm total load on the amp thus reducing the 250watt rms total output?

No, it would be considered a 4 ohm stereo load. The only time it would matter, by how you're thinking, is if you bridged the amp. So you would be getting the stated 125 watts to each sub for a total of 250 watts. Make sure you send the amp a mono signal or you're going to have cancellation issues.
