what would be the best way to wire 3 pair of 6x9's and what would be a good choice of amp 1, 2, or 4 channel amp?

You want to use 3 pairs of speakers?  I suggest that the "best way" is to use one amplifier channel per speaker, which means for 3 pairs you need six channels of amplification.  Why do you think you need six full-range speakers in your vehicle?
