Crossover Set Up?

I will be running a Fosgate 851x for the front and rear driving 4 tweeters, two 5.25" mid range, two 6.5" mid bass, and two 4" rear fill Infinity Kappa 2 ways. I will have an 851S driving a single 12" sub.

Can someone recommend crossover frequencies for the mid bass and mid range. I am contemplating passive crossovers for the system in conjunction with the frequencies available on the amp (the 851X). I will run the 851S with the low pass frequency.

Proper crossover settings depend on the characteristics of the speakers, on the type of sound desired and on lots of subjective things like what the installation does to the sound characteristics.  That's why it is most common in car audio to use multiple amps and active crossovers, as they are much easier to fine tune after installation.

That being said, I actually like the smoothness that can be created using passive crossovers and love to use them.  Some target crossover points for your initial design might be 600Hz for mid-bass to mid-range, and 3800Hz for mid-range to tweet.  The crossover for the tweet is probably the one you'll want to pay the closest attention to and make sure you are within the recomendations of the speakers you are using.  Some tweeters want to be crossed as low as 2500Hz, some as high as 5000Hz.  Buy an assortment of caps and coil in the target ranges in case you need to swap out components after installation to solve a problem.
