Head Unit Speaker Loads

The head’s internal amp cannot be turned off.

Since external amps (and wires to the speakers) are used, can you just leave the head speaker outs unused/disconnected/unloaded?

Yes, leave them unused.  As long as there is no connection to speakers, there are no problems.  Secure and tape off any wires not used so there won't be any danger of contact to ground.
