Either way, they will be mono.  A left (or right) signal is mono.  The combination of left and right is stereo.  The hookup that uses the least amount of RCA's would be to run the signal, left and right, into one amp...then output the signal to the inputs of the second amp.  That is, if your amps have an output set of jacks.

You would get the same basic overall result, though, by using one sub for left and the other sub for right.  You will be running the subwoofers in stereo, as the end result.  You would use a Y-splitter on each amp to feed the one signal into both inputs.

Build the box so that it performs well in the worst case scenario and, in return, it will reward you at all times.

Well i'm lookin to get all mono on my subs. By putting both left and right channels to both amps that had one sub bridged per amp wouldnt that give me mono, since both left and right channels are playing through one sub.

You're right.  Even though the input to the amp is stereo, by bridging the left and right speaker terminals you are combining the signals into one mono signal.  It doesn't matter how many subs are hooked up...it's the act of bridging that makes it mono.
