I recently purchased an 02 Jetta and want to put my old subs and amp in.  Does anyone know what this project might entail?

I am not so sure what you mean. Maybe you can be more specific and add more detail someone here might be able to help you out.

I just need to put in a speaker level to line level converter.  I'm not sure where the best place to tap into the factory speaker wires will be or what color wires they will be.

are there speakers on your rear deck?  if so then tap them right there. if not then look in the kick panel and usually speaker wires are twisted together, but always verify with a DMM for ACvoltage.
