Hello My ICE has finally got to the point where I need a high output alternator but the question i have is

My stereo is only turned up high enough to start the old "dimming headlights" about 20% of the time its on as the car still has to cart my small kids around and it never gets turned up louder when there in it, so if I fit a HO alternator could there be damage to the battery or any other electrical components by having the higher output and it not actually needing it all the time??

Alternators don't put out their full current output all the time. They are designed to monitor the vehicle's current/voltage requirements and respond to the vehicle's changing needs. If you haven't installed a stiffening capacitor yet, that might be a better alternative. Installing a high output alternator is usually a costly and involved step taken only after all other power upgrades are complete. You may be able to just upgrade your existing battery to fill in that 20 % need.

Try the Big 3.  That should help a lot with the dimming.  Capcitor is probably not the way to go.  It'll just add somethin else that needs to be charged.
That's my opinion. Take it, leave it, or correct me.
