Does it matter where you tap into the 12v rem wire in the fuse box?

Yes.  If you are hooking an amplifier up to a factory head unit, you want to use a switced point so the amplifier won't be on when the vehicle is off.  If you are using an aftermarket head unit, then use the blue/white stripe wire in the head units wiring harness.

So I think I understand how that works. But does it matter which 12v switch I tap into?

Ignition or accessory should be just fine.

If you tap into anything make sure it fused.
