Kia Sedona Ex, audio/video system

Hello,

I was hoping that you guys can help me in designing a audio/video system for my 2003 sedona ex and answer a few questions for me regarding tis project. I want the system to have a double din touch screen in dash dvd, 4 headrest lcds, replace all speakers in factory locations, and if possible have dolby digital 5.1 surround sound.  I want to keep the interior looking as close to stock as possible and 18" subs are out of the question as I need the storage space behind the seat to carry a baby stroller. What equipment would you guys recomend including deck, lcd's, amp and speakers ect. ?

Also, I have some questions such as 1. is there a way to install the lcds with quick disconect wiring in case I ever need to take out the seats to haul large item? 2. Are all lcds made equally or are they one of those items in which your better to buy the expensive brands than the cheap lcds?
