How do i hook up RCA and remote wires to a 2001 monte carlo LS? And what is the best way to wire a 1000 watt 4ohm 12" subwoofer?

Most amplifiers have a high level input built into them already. If the amp has such a feature, then just take the output from the OEM amplifier and wire it into the high level input connector at the amplifier. Use the switched ignition to turn on the amplifier. If the sub is a single voice coil 4 ohm subwoofer, then you can only hook it up in a 4 ohm load. If it's a dual 4 ohm, then you can wire it up in a 2 ohm load or 8 ohm load.
