03 avalanche head unit

I just picked up a 2003 Chevy Avalanche with the blows (Bose) system and I will be just installing a new head unit for now. I picked up a Metra 70-2003 harness today then it occured to me, dough! I need low level signals to the amp's. Do I need a more special harness with RCA inputs or can I solder on some RCA male ends to the Metra harness? Also, whats this deal with the factory chime? There is some harness thats $100 that my local shop said I did not need unless I wanted the factory chime to warn me if i leave my lights on. Is it recommended to get that harness and return this one? I have been out of the Audio loop ever since Chevy decided to start doing this set-up.
