I have 3 - 12" 8 Ohm speakers that I want to install, however I have not decided on the amp. The speakers are rated @ RMS 150 Watts and 300 Peak. They are Kicker Comps 07C128.
Should I run them all Parallel and get a 2.666666666 Ohm load and buy an amp that is stable @ 2 Ohms?
Should I buy an amp rated for 800 watts max and continuous 360 watts when driven at 2 ohms?

Could I hook an 300 Watt RMS amp up that is stable @ 4 ohms to each speaker? I am thinking that if the resistance is doubled the power is divided by 2.

Both of your schemes would work just fine and if you drive all three from one amp you can use any amp rated up to about 600 watts into 2 ohms.

Buy a class D mono amp that puts out 500 watts RMS into 2 ohms.  That's a common power configuration and you will have several to choose from.  Parallel the subs to 2.66 ohms as you said.  Use the vented box design per the manual...1.75 to 2.25 cu ft per sub.
Build the box so that it performs well in the worst case scenario and, in return, it will reward you at all times.
