crossover over a crossover?

I have noticed that some speakers come with a crossover attached inline with the speaker itself (ex: Infinity Kappas). My question is if i hook up these speakers and have my HU's crossover set which one will be the dominant crossover?
Will I still be able to adjust the speakers from the HU or am i stick with what the speakers inline cross over is set with?

All multi-element speakers use some sort of built-in crossover.  The function of that crossover is mainly to protect the tweeter from low frequency power input  The crossover in your HU is typically just a high-pass for the woofer of the 2-way set (or a LP for a subwoofer.)  Yes, you will use both of them. 

Some head units do have more sophisticated crossovers and can be used to drive bi-amp or tri-amp setups.  If this is what you want to do yet you asked the question in your initial post, I suggest you need to go to a professional install shop and get some help.

Im just wanting to upgrade my 6x9s and 4x6s.
I have been looking into the infinity kappa 2ohm speakers and they
come with the crossover box inline with the speaker. I was referring more towards mid range speakers rather than subwoofers.
I just didnt want to get them and i wont be able to adjust them to my liking.

The crossovers that come with any 2-way set like the Kappas need to be used with them unless you are building a bi-amped system.  You will not lose any functionality you have now.

Are you using a 4channel amp for your (4) 2ohm speakers? If not, and you're wiring (1) 2ohm speaker to each channel on your HU, you may burn-up the HU's internal amplifier.
