I lost my remote and have to order a new one. But in the mean time I live in a small town and don't want anyone who found it to get lucky and have all access to my car. How do I clear the transmitter from the memory On My viper 791?

If you still have one working transmitter than you can use feature 12 of the transmitter learn routine listed on page 36 of the installation manual. If you do not have a working transmitter, you will have to wait until your new one arrives.
Installer, IT support, and FFL. I need less hobbies.

Yup take care of thats ASAP my sister drives an 04 bmw 325 ci went to libary lost keys and someone went to the parking lot and took off with the car and its still not found yet. Once someone has access to your car they got your garage door opener and all the goodies in there and access to your house. Take care of it or take the fuse out of the alarm till you get a new remote.
