I hooked up a avital 5103l to a 95 gmc sierra. I had the locks, lights, remote start all working until I mounted it under the dash. I have pulled it all back out and looked at it all. I cant find anything loose but here is what it does now. The control center led will light up when armed and flash, but the control button seems to be unresponsive. I can not get into any menu settings or shutdown diagnostics. Also the remote start now only causes the unit to click until I tap the brake or hit the remote start button again. It sounds like it is trying to supply power to something then loses power and tries again, over and over and over.... It also causes some relays under the hood to click. The unit was working fine till I tried to mount it. Is it possible I was too rough trying to get it stuck in place or is there a wire I could be missing that could cause all this. I was wondering if I maybe messed up the connector where the control center plug is attached to the circuit board since it seems to only light the led now. Is there any way to test the connection at the unit? What all does the control center handle aside from the led and the antenna?

First do a visual inspection to look for anything obvious (a loose plug, toggle switch off, pinched/damaged wire(s), etc.). Be sure to check the fuses, too.
If you find nothing right off the bat, test your connections for voltage at the ignition harness. Do you have ignition output? How about starter output?
As far as the valet switch not working, you can test for continuity. I don't have a pinout, but I think there's only 6 pins, so you should be able to figure it out. You can also test the cable end to end.
See if it'll go in valet with the remote. If there is a way, it should be in your manual.
