How do I setup a latching switch that would be activated by a momentary switch that would close a relay until it lost power?

I am wanting to build a clutch start cancel switch similar to the ones that come standard on the 89-95 Toyota 4WD pickups. I want to be able to put the key in and turn it to the accessory position, push a momentary button which latches a relay that closes the clutch lockout circuit and stays latched until I turn off the ignition or until the power is lost at the accessory position during cranking.

Check out this link  https://www.the12volt.com/relays/page5.asp it has a few types of latching relay applications.
