I know almost all companies include a relay for the starter kill but i  was wondering how many include extra relays for the trunk, horn, sometimes factory arm and disarm and sometimes lights.

That depends on the model of the unit more than the brand...for example (forgive me for using 3 year old model #s but I haven't sold Viper in that long) DEI made the Viper 300 alarm, which only had a relay for parking lights, and the 800ESP which had lights, trunk, dome supervision, and doorlocks all onboard. I'm not sure what their current models will do however.
Never saw one with relays for horn or FAD/FAA - usually the low-current outputs will work fine as long as the wire on the car is (-) and not multiplexed.

So....remote start then. Well....Astroflex. Of course all the relays for the starter part, including the anti grind. But also relays for ALL types of lock systems. The lock harness has 6 wires 87, 87a, and 30.  As well as an additional bosch relay that is built in and FULLY programable. It is controlled internally, so the p[ins you have to work with are 87, 87a, and 30.
