Someone I know has a 1999 or 2000 300M with a Valet rs installed. THe car only had 2 keys with the chip in them, one of which was installed in the bypass a few years ago. Long story short, someone lost her only key and valet remote.
My question is:
If I unplug all of the wires from the Valet brain, will she be able to use the car with the key I take out of the bypass? Will her facory keyless still work? She doesn't want the remote starter anymore.

You dont necessarily have to take out the valet wiring at all.
You can leave it in there and just take the key from the bypass.
If she does have factory keyless remote, she can use that.
My advice:
You should get another key made for the car before you lose this one and have to have it towed to the dealer and have to pay a ton for them to reset everything and program a new key (plus, all that paper about ownership)
Once you got 2 keys, you should use a keyless type of bypass that doesnt require for you to leave a key (my recommendation PKU-CH is from bypasskit)
You can also get another valet remote to program to the brain.
You never stated what model valet, but you need to delete that remote so that someone doesnt steal your car because your key and remote is somewhere out there.
Note: You Always Dont Get What You Pay For.
