Hi, can this amp be bridged? I can't see anywhere in the manual that says so?

This is a mono sub amp so it is basically bridged internally. It can handle a 2 ohm load so if you connected two 4 ohm sub to the plus and minus terminals you would get 400 watts RMS for your sub(s) (but sony overates their stuff).

I have 2 10" subs wired to 4 ohms running off of 1 positive and 1 negative. Should I be using both positive and negative terminals or just the 1 set?

Just using one of each is correct.  The other set is connected to the ones you are using, and are there to facilitate connecting two boxes.
Build the box so that it performs well in the worst case scenario and, in return, it will reward you at all times.
