No, you don't.  You can't lose what you never had.  You can only compare to what was there before, and in the case of LOC's, you are comparing to the OEM system.  So it is always a gain and never a loss.
Build the box so that it performs well in the worst case scenario and, in return, it will reward you at all times.

I meant to ask if there is a sound quality difference between using the converters and using the rca outputs on the back of the deck whether they are sub outputs or rear outputs.

No not really. You might even lose some sound quality if you bought a low end deck that didn't have very high voltage preamp outputs (your high to low level convertor should put out some where around 2.7 to 3 volts i think, some have a gain control also).
