Golf 96 front speaker wire

I just bought 2 new pioneer speakers ans I would like to know how do find what wire (of the two) i need to connect to one of  the wire that is attached to the speakers.  Does it matter wich one I use?

Also in the rears speakers there is 4 wires what should i do?

Yes, it matters.  All speakers need to have the same polarity so the cones are all moving in sync.  Otherwise you will lose a lot of bass. 
 
For the fronts, check if you have these colors.  If so, connect them as POSITIVE:
 
Left:   BLUE/BLACK
Right:  RED / WHITE
 
If the rears have 4 wires, are the connected in PAIRS to the same two terminals?  If so, do you have separate tweeters or rear door speakers?  Then they are probably just jumping the other speakers with the extra wires.  Just connect each pair to your new speakers in the same manner.  Look for these colors as POSITIVE:
 
Left:  RED / LT. GREEN
Right: BLUE/LT. GREEN
