also for a 2001 nissan pathfinder would you go with the security box to hold the key or go with the bypass that doesn't require a key?

if cost is not an issue, I would go with the no key required unit that bypasses via the data wire. There is also one that uses a coil around the cylinder and does not require a key, but I see very little difference between that and the key required universal bypass units since that also uses a coil around the cylinder.
I see a note that says you need to power the keysense wire which is RED / Blue and it is positive so you need to use a relay. I think powering it as an ignition will do. i just thought i would throw that in there in case your notes dont mention it.

for the sable my diagram shows accessory as BLACK/ Light green and ignition 2 as Gray / YELLOW.

Does this matter if they are reversed?

Test it, and wire it accordingly. If it drops out during cranking then it is an accessory, if it stays on during cranking then it is an Ignition. You can use a test light on the ignition wires if thats all you have. Otherwise you should have a DMM.
