Ok I need to get into this area of the vehicles in order to help me be able to get a job. Does anyone have a good location I can start on navigation and video? Atleast learn the basics, maybe more.

Well the basics are very basic. Mounting and placement are the difficult parts, at least most of the time. For Nav you have a reverse light+, speed sense(digital most of the time so -12V/0V), and the antenna. I don't know of many places you can go for general reading, so I guess just read through this forum.

Also on top of what auex said, hands on experience is best. I don't want to discredit the mobile electronic schools in any way, but the best teacher is hands on experience.

Just get a job at any store. I got hired with no experience in Nav, video or alarms. I had done plenty of stereos.
Not only did I do many more stereo systems, I put in some video and the occasional Viper. I was one of the slower installers when it came to alarms, but my work was always good.
Once you see a few different cars and watch the installers, you realize anything can be done when you're not afraid to get into it.
I still do many installs on the side, but I stay away from alarms and remote starts. I've never done a remote start and I don't have any good deals on alarms.
I'd like to learn, but on my own time with my own car. I'm not putting a remote start in my 5 speed truck, that is just wrong, maybe mom's Hyundai.
Once you get a job, you can try to get a discount on the equipment you wish to learn...install it for yourself and ask the shop foreman/manager to be assigned more of those jobs.

Usually in the driver's kick panel harness going to rear of vehicle or at the reverse light themselves.

Is there any way to tell which wire it is? If it makes a difference, it's for a 05 Chrysler 300C

Well that would be where your multimeter comes in. Go to the trunk, look at the lights, test to find out what color wire is correct, then go look in the kick panel for the same wire.
