I jsut had a thought.  Let's say I did purchase one of those RF subs, and it did have a spike, could you use the EQ to flatten out the spike?  Or would a larger enclosure flatten out the response?

A larger enclosure will flatten out the response naturally, but yes you could theoretically use an EQ to help smooth it out.  You'll need an EQ with at least two parametric bands that can operate that low, and you'll still be missing the deep bass but you could in theory make it sound a lot more natural.  You'll never get it to sound 100% "right" in that small an enclosure though.

I just downloaded the WinISD proggie, and it seems that all of the subs that I input were marginally flatter in response with bigger sealed boxes.  Some needed a bigger box than others.  Case in point the RF T110D2 compared to the Infinity Kappa Perfect 10dVQ.  The RF needed a bigger box from the get go. 

After thinking about it, having to EQ out a problem is a band aid, not a solution to the box dimension mistakes.
