I decided to add a subwoofer to my vehicle (Sony 10").  I ordered a Sony CDX 705 HU that has 3 pre-outs.  I have a Pioneer 4ch amp (GM-X304) laying around that I would like to use for the sub only.  How would I hook up the amp to the sub?  Do I use it as a 2ch and take the + from the left & right and hook it up to the sub?

I'm assuming the sony sub is a single 4 ohm voice coil.
You can bridge 2 channels to 1 & run this sub of that bridged channel. You are going to have 2 channels available. might consider getting a second sub.

Or run the 2 extra channels to your front speakers.

Yes, it is a single coil.  2 subs don't fit.  It is a 2 seater RX-7 convertible.

I have 3 amps (incl the sub).  A 4ch running the doors and rears, a 4ch running the headrest spkrs, and this 4ch I am trying to use for the sub.

I guess I will have to look for another 2ch amp.
