ok first of these are rated at 125rms each. i'm thinking about running parallel which gives me 1.33333ohm,  series would be 12ohm. my question is what size amp to drive these that's stable at 1ohm? do I look for 125watts or total the 3 so like 400watts? this part has always confused me. Also I have a mono alpine 350 would this be fine if I change my mind and just run 2 of these?

look for a 1 ohm stable something around 400rms amp.. Or you could get another of the same subs and parallel/series them and get a 2 ohm amp at 500rms

yes if you ran 2 of those 10w1 an alpine mrpm350 would work perfect.
