I am planning on doing another Keypad install but this  time in a 2006 Chrystler 300.  I go the CHDL7-PK2 and it wants me to use the 2 keys to program it.  Besides only having one of the keys (used car) all I really need for the module to do is unlock the doors when getting signal from the keypad.  Do I have to go through the key programming for that?  Am I right in guessing that all that key programming stuff has to do with remote starting systems that I am not installing?

Yes, the door locking interface will work fine without programming the key. As you stated, it is only used if you are installing a remote start.
Installer, IT support, and FFL. I need less hobbies.
