I Need to know if anyone has a diagram or information on installing a new head unit in this rig I can get the front speakers working but not all of the rear.

This usually is no concern because you should want most of your sound to come from the front, but try powering up the factory amp turn on lead in the harness.  This wire should be pink in the factory radio harness and may be labelled as power antenna on the Metra harness.
My ex once told me I have a perfect face for radio.

That is true but it has two 6.5's in the rear doors I would like to use, The 4X10's in the roof seem to be a wast of time.

As was stated before there's a pink wire that must be hooked up to the amp turn on of the after market radio.  It may not be in the standard harness though.  If there were 2 harnesses plugged into the stock radio, then it'll be in the smaller plug.
