How would I wire up a 12volt device to turn off when I arm my alarm and turn on when I disarm my alarm.

What are you planning to turn off when armed? Can you not just use the ignition to power your device (or relay) so that it turns off when your car is switched off?

If you still need it, here's a little diagram I made up for you.
