I know a little that the SPST and SPDT are functioning the same, but which choice is better.

With compatible mounting and price & size being the same, SPDT because it can be used as an SPST.

Wonderful. So is there a place in the fuse box for the relay? Or just hang it under the dashboard?

I don't know about the fusebox - have a look.
And like most inorganic things, relays should be mounted, not hung.

Two ignitions?
Did you even look at the referral guide you posted on page 1? Pink in the heavy duty lead, H3 for one ignition, pink/white for the second ignition.
Again look at those diagrams I posted.

Looked at your diagram, doesn't look like I need a relay for a second ignition.

Okay more questions.
For Diodes: I read these diodes (1N4001/L, 1N4004/L, 1N4007/L...)
I know their function or purpose is the same, but are these the same? does it matter which one you use if they have the same amp? Why do the come with different number on them? What are the numbers represent?
